A regular of mine put it perfectly last week: "Precious, I eat like a saint until the sun goes down. Then I stand in front of the cupboard like it owes me money." It's July. The cupboard conversations have started. And after thirty years of watching this exact pattern arrive with the cold every year, I can tell you: it's not weak willpower. It's a rollercoaster with a timetable.

The mechanism behind the 8pm raid

Three things gang up on you in winter. The early dark nudges your brain to chase quick serotonin, and the fastest over-the-counter serotonin lift it knows is refined carbs — hence why nobody craves chicken breast at 20h00. The cold parks you on the couch, so the after-supper walk that used to flatten your evening blood sugar is hibernating. And then the rollercoaster does the rest: white bread or sugar spikes your blood glucose, your body over-corrects, the dip an hour or two later reads as hunger, and the cupboard door opens again.
